Background: Unbelievably powerful, warm, and complex . Garlic shrub tastes like you’re biting into a clove for the first time. It’s strong scent and complex flavors make for a stand alone condiment, or the base of the most savory salad dressing. Our garlic is a blend of Finger Lakes grown heirloom varieties. All are grown with sustainable agricultural practices, some are certified organic as well .Garlic is a plant in the Allium (onion) family. It grows almost everywhere on the planet. It was used by Egyptians, Romans, Scythians, and Chinese as a number one illness and infection fighter.  We have some of the best garlic growers in the Finger Lakes.  When legal we attended almost every Garlic Festival known to humans. They are the funnest and smelliest events. One of the varieties grown for us is called ‘music’.  A very complex variety grown in Europe and the US. When asked about what you are eating, you can say “I am eating music”… a great conversation starter.

Health: Scientists now know that most of its health benefits are caused by sulfur compounds (allicins) formed when a garlic clove is chopped, crushed, chewed or extracted (as in shrub). Garlic also contains other compounds including diallyl disulfide and s-allyl cysteine. These two compounds are efficient agents for detoxification of your body’s cells. Specifically, it helps bind toxins in the liver.  The sulfur compounds from garlic enter the body from the digestive tract and travel all over the body, where it exerts its potent effects. Garlic also contains bio available B6, Manganese, selenium (guys?) and many micro minerals bound to the Vit C complex. Other known health benefits are reduction of blood pressure, general systemic antimicrobial, and reduces some of the LDL “sticky” cholesterols. A recipe for longevity. 

Our garlic shrub has a preponderance of allicin, the amazing sulfur based compound that, when  extracted and consumed, has been shown to be a remarkable antimicrobial and antiviral.  During WWII it was used to curb infections as antibiotics were not always available.

Uses: Garlic shrub pours easily as a finishing condiments on anything like salads, meats, noodles, etc. Garlic shrub or bitters can also be used in a pinch when you have run out of fresh, don’t want dried, or need a small flavor splash of garlic music in your dish. 


We extract the flavor and juices from fruit, root  and herbs harvested here in the Finger Lakes region whenever possible. If off-season or not native to the Finger Lakes, only the highest quality fruits are used. This helps produce the vibrant color and flavor of our small-batch shrub.
