Background:    Our blueberries are grown in Weedsport NY – on the fertile, acidic black earth lowlands of the upper Finger Lakes.  We use a late variety called Jersey; long ripening fruit that produces darker  phenols than short season varieties. Our grower is an old Italian wine maker who knows how to make them blueberries sing.  With such deep flavor, we found that kids naturally like blueberry shrub, especially in seltzer, sparkling water or soda stream.    

Health:   The CDC calls them a super power fruit.  Blueberries have many health benefits, including reducing blood pressure, helping to prevent cancer, and boosting your immune system. Blueberries are loaded with many micro minerals necessary for immune system function, including manganese, magnesium, germanium, zinc, iodine and iron.  The antioxidants are dense enough to assist in cell repair at the genetic level.  And, drum roll please……..blueberries have amazing amounts of Vitamin K1 and K2.  Why is that important?  K1 and K2 are key to calcium regulation in the body.  It prevents and solubilizes calcium so it doesn’t stick to certain cholesterols to later calcify, thus hardening muscle tissue and arteries. I.E – It’s good for your heart.  

Uses:   Makes a great soda water flavoring without the need for sweetener.  Or a unique dressing, especially complimentary with strong, dark colored veggies. And for our kombucha lovers, make a basic tea kombucha and add blueberry shrub to taste. Or liven up a fresh blueberry pie with a generous drizzle of blueberry shrub.
