Background: This year’s apple shrub is a Jonamac – locally grown with Macintosh sweetness with tart firmness of the Jonathan apple. The cross of the two was completed in Geneva NY  in the late 1960’s.  Although not brilliant in colour, Jonamac makes up for it in taste.  Some of our growers say a touch of honey.  We agree.  As the apples age in our coolers, depth develops, similar to the way our apple shrub ages!

Uses: Apple shrub is one of more useful shrubs as it accents almost any high spirit and can stand alone. High pectin levels clean your gut and provide good material for digestive biomes. Plus,  if you want a clean apple taste with slight acidity from the fruit and vinegar, this is it.  A vegetable dressing is another culinary sweet spot.  Meat marinade, specifically pork… it pairs well.

We extract the flavor and juices from fruit harvested here in the Finger Lakes region whenever possible. If off-season or not native to the Finger Lakes, only the highest quality fruits are used.
